It has a particularly strong sweet taste, and the influence of buckwheat noodle soup can be seen. In other regions, grated ginger is used as a condiment, but in Kurashiki, grated wasabi is used. (In some households and stores, ginger is also used.) This may also be due to the influence of Soba.
